PROTEIN BANANA BREAD
There’s something very homey about banana bread. Growing up, there was always some family member or a school bake sale offering up a loaf of a rich, banana-studded beauty that was too delicious to resist.
This banana bread tastes amazing, and it will make your house smell even more amazing as it bakes! It’s made without any flour or sugar, and BONUS, it’s high in protein, which means it will keep you feeling fueled and satisfied if you have it for breakfast, a snack, or even dessert!
This Grain Free Banana Bread has to be one of my personal favorite recipes. So, for all of you banana bread fans that prefer to keep tabs on your carbs. This one is for you.
INGREDIENTS
1⅓ cup protein powder
½ cup erythritol or Stevia
¼ cup coconut flour
4 teaspoons baking powder
1½ teaspoons cinnamon
2 bananas, mashed
4 egg whites
1TB vanilla extract
1/2TB Banana Extract, optional
INSTRUCTIONS
Preheat oven to 350°F. Spray an 8x4 loaf pan with cooking spray.
In a bowl, combine all of the dry ingredients.
Then add the mashed banana, egg whites, and vanilla extract and stir until completely combined.
Pour the batter into the loaf pan. Bake in the oven at 350°F for about 30 minutes, or until a toothpick inserted in the center comes out clean. Check the bread at 25 minutes. All ovens bake differently. You do not want to overbake this bread. Allow to cool about 10 minutes in the pan before slicing and enjoying.
